No, we’re not talking about tea with milk here… White tea is an uncured, unprocessed tea which has been drunk in China for more than 1,000 years, and has been steadily gaining popularity in the west. It has a light and very delicate flavor, never bitter and with a slight sweetness. It is made from tea picked in early Spring, shortly before the buds open fully and its name comes from the silver hairs that cover the buds; these turn white when the tea is dried. The quality of white tea depends to a large degree on the ratio of leaves to buds: White Peony for example contains 2 leaves for each bud, whereas the finest of all white teas, Silver Needle, contains 100% buds. White tea is thought to be even more beneficial to health than green tea, having a greater antibacterial effect and containing more polyphenols (antioxidants).
Although white tea is generally more expensive than black or green tea (it can sell for $15/oz or more), you really should try it, I think it’s worth every cent!
